Tojiro Shirogami tradicionalna serija nozeva napravljena je po meri svakog pravog Sushi majstora. Nozevi se kuju i bruse rucno upotrebom istih metoda koje su vekovima oblikovale japansku kulturu proizvodnje seciva.
Deba je noz namenjen za filetiranje i obradu ribe. Ove nozeve karakterise veca debljina seciva koje je bruseno jednostrano sto osigurava izdrzljivost, pa ih pored filetiranja mozemo koristiti i za rezanje kostiju kod ribe kao i kod sitnijih primeraka zivine. Duzina ostrice od 180mm smatra se velikom Debom i prikladna je za krupnije primerke riba, odnosno one koje su teze od 1kg. Narocito cete uzivati ukoliko pripremate tunu ili losos.
Celik koji se koristi za izradu ovog noza je Shirogami br. 1, odnosno, beli celik. Ovo je ubedljivo najpopularniji izbor za tradicionalne nozeve, jer upravo ovaj celik moze postici savrseni nivo ostrine zbog svoje slicnosti sa cuvenim Tamahagane celikom. Napravljen je tehnikom laminacije tvrdjeg i mekseg dela, a brusen je jednostrano sto je jedinstveno za prave tradicionalne japanske nozeve. Upravo zbog ovoga pogodan je iskljucivo za desnoruke korisnike.
Drska je tradicionalnog oblika napravljena od drveta magnolije sa crnim delom od modelirane smole. Dizajnirane su tako da pruzaju prijatan osecaj u ruci desnorukim korisnicima, dok prirodna tekstura drveta sprecava klizanje usled zaprljanosti ruku majstora.

Deba is a knife intended for filleting and processing fish. These knives are characterized by a greater thickness of the blade, which is ground on one side, which ensures durability, so in addition to filleting, we can also use them for cutting bones in fish as well as in smaller specimens of poultry. The length of the blade of 180 mm is considered a large Deb and is suitable for larger specimens of fish, i.e. those that weigh more than 1 kg. You will especially enjoy it if you prepare tuna or salmon.
The steel used to make this knife is Shirogami no. 1, that is, white steel. This is by far the most popular choice for traditional knives, as it is this steel that can achieve the perfect level of sharpness due to its similarity to the famous Tamahagane steel. It is made using the lamination technique of harder and softer parts, and it is ground on one side, which is unique for real traditional Japanese knives. This is precisely why it is suitable exclusively for right-handed users.
The handle has a traditional shape made of magnolia wood with a black part made of modeled resin. They are designed to provide a pleasant feeling in the hand for right-handed users, while the natural texture of the wood prevents slipping due to dirty hands.
