Yaxell Super Gou Ypsilon Gyuto 200 mm japanski je kuhinjski noz za svestranu upotrebu, iznimno je precizno izradjen noz te pruza vrhunsko iskustvo rezanja. Izradjen je od nehrdjajuceg celika s jezgrom od jakog mikrokarbidnog praskastog celika SG2 izuzetne tvrdoce od 63 HRC. Nozevi iz serije Super Gou imaju impresivnu ostricu od 193 sloja s prekrasnim damast uzorkom i rucno ugraviranim kanji slovima. Na kraju elegantne crne drske od mikarte ugraviran je grb samurajske obitelji iz koje se razvila tvrtka Yaxell. Noz dolazi s drvenom sayom.

OBLIK OSTRICE:Gyuto je visenamjenski noz koji ce zablistati pri svim vrstama rezanja i sjeckanja na kuhinjskoj dasci. Zbog duge ostrice savrsen je za rezanje vecih komada mesa i ribe kao i za pripremu povrca. Duzina ostrice je 200 mm.

CELIK:Jezgra noza je od izvrsnog, praskastog SG2 celika (63 HRC). To je jedan od najtvrdjih celika koji se koristi za izradu japanskih kuhinjskih nozeva, tvrdoca od 62-63 HRC jamci za dugotrajnu ostrinu i glatku ostricu.

GEOMETRIJA:Ostrica je obostrano brusena(pogodna za ljevake i desnjake) i ima konveksan (hamaguri) profil. Kod konveksnog oblika ostrica je brusena od poledjine prema ostrici tako da je blago konveksna. Takav se presjek takodjer naziva hamaguri i potjece od katane. Pruza iznimnu ostrinu i sprjecava lijepljenje hrane za ostricu. U usporedbi s konkavnim presjekom profila, deblji je, ali manje osjetljiv. Zbog specificne geometrije ostrice, nozeve s hamaguri profilom teze je tanjiti.

LAMINACIJA:San-mai (sendvic) konstrukcija ostrice odnosi se na jezgru od SG2 nehrdjajuceg celika i 192 vanjska sloja od mekseg, takodjer nehrdjajuceg celika.

ZAVRSNI IZGLED:Osim bogatog damasta, ostrica je takodjer ukrasena s 4 rucno ugravirana kanji slova "Super Gou – duh samuraja".

DRSKA:Izvrsnu ravnotezu nozu pruza drska od crne mikarte koja je izuzetno izdrzljiva i otporna na habanje. Drska pruza siguran i cvrst zahvat koji ce sprijeciti klizanje dlana prema ostrici. Zavrsetak drske je od nehrdjajuceg celika i osigurava gladak i ugodan prijelaz izmedju drske i ostrice. Za dodatni estetski naboj kovacnica Yaxell dodala je mozaik zakovicu postavljenu na sredinu drske.

Donji dio noza je ravan i na kraju ima celicnu plocicu na kojoj je utisnut tradicionalni grb samurajske obitelji iz koje potjece tvrtka Yaxell. Ovaj se dio takodjer moze koristiti za razne kuharske zadatke, kao sto je npr. drobljenje cesnjaka.

The Yaxell Super Gou Ypsilon Gyuto 200mm is a Japanese multi-purpose kitchen knife. The Super Gou blades feature an impressive 193-layer blade with a beautiful Damascus pattern and hand-engraved Kanji characters. It is a carefully crafted knife that offers an excellent cutting experience. The knife comes with a wooden sheath.

BLADE SHAPE:The gyuto design is intended for versatile use, catering to chefs who prefer a medium-sized multipurpose knife suitable for meat, fish, and vegetables. The double bevel blade is 200mm (7.9") long and should work well for both chefs and experienced home cooks.

This knife is used for various cutting techniques, such as slicing, chopping, dicing, and julienne, making it capable of handling a wide range of kitchen tasks - from cutting large pieces of meat to finely chopping garlic.

STEEL:This knife is made of SG2/R2 powder steel, hardened to around 63 HRC. Powder steels are currently the hardest steels available for knife making, which means the knife will keep a smooth and sharp edge for a long time. Due to the high chromium (Cr) content in its steel structure, it is also incredibly easy to maintain. The composition and microstructure of the steel provide extremely fine and smooth sharpness.

LAMINATION:A high hardness of around 63 HRC means the blade won’t be very tough, so the blade’s core was laminated using the san-mai method to improve its structural integrity and subsequent ability to withstand impacts and prevent chipping. San-mai translates to “three layers” in Japanese, referring to a blade that is composed of an inner layer of harder steel (hagane) and of two outer layers of softer steel (jigane) that protect the core.

BLADE FINSIH:In addition to the rich damascus pattern (193 layers!) , the blade is also decorated with 4 hand engraved kanji characters "Super Gou - the spirit of the samurai". For an added aesthetic touch, the Yaxell smithy has added a mosaic rivet in the centre of the handle.

HANDLE:The knife is perfectly balanced thanks to its black micarta handle, which is extremely durable and wear resistant. The handle offers a secure and firm grip that will prevent your hand from slipping towards the blade. The bolster of the blade is stainless and ensures a smooth and comfortable transition between the handle and the blade. One rivet hold the knife securely attached to the handle. The lower part of the handle is flat and finished with a steel base, stamped with the traditional coat of arms of the samurai family, from which the Yaxell smithy originates. This part of the knife can also be used for various cooking tasks, such as crushing garlic.
